How can i switch (mono to polyphonic) or (polyphonic to mono) in Midi mode ? Thanks

Midi is always polyphonic and CV/GATE is always 'monophonic'. In other words the single CV/GATE controls all 8 voices at once, so whatever note(s) you last released using midi will play together as a memorised chord or note over CV/GATE.

Version 2 Firmware now features Chord mode. Holding Shift and Trigger for 3 secs toggles between Poly mode and Chord mode. Its operates as you'd expect, playing a single note on a midi controller will play a chord from the chord memory. It operates in a similar way to Mono mode over CV only its not monophonic, multiple chords can be played at once until you run out of voices.
